More and more yummies....

Before I get started in some more goodies I want to thank my very special friend, Linda Percy, for helping me with this blog by sending me some truly fantastic recipes. Thank you, my friend, for caring about me and caring enough to help me with this blog.  You have no idea how much I appreciate this!!!!Love you!!!!

Ok....just a few minutes ago Linda shared with me her recipe for Apple Dump Cake. And according to the instructions you do just that....DUMP everything in a pan and cook it! Could anything be any easier? And I understand that her better half loves this cake and believe me....that is a fantastic endorsement. Thanks Bob!!!!

So we will start with the:

                                                  APPLE DUMP CAKE


2 cans apple pie filling                                             1 box yellow cake mix
Cinnamon                                                                   2 sticks butter cut into 12 pieces
1 c chopped pecans (walnuts can be used, too)

Place pie filling in a 9 x 12 pan that has been sprayed with butter flavored Pam. Sprinkle with cinnamon and add chopped nuts. Sprinkle with dry cake mix and then dot the top with the 12 pieces of butter.  Bake at 375 for 45 minutes. 

Recipes says you can top with ice cream or Cool Whip when serving but my friend, Bob, says it's just a grand without either. And imagine how good this would be using peach, blueberry or blackberry pie filling!!!!!!

So....we have dessert and now we backtrack and do a before dinner appetizer.....Taco Dip.


                                                                TACO DIP




1 8 oz. cream cheese                                               small dollop Sour cream
1 envelope Taco seasoning                                      lettuce, tomatoes, green onion, chopped
grated Mexican cheese                                           black olives, sliced or chopped

Mix cream cheese, sour cream and taco seasoning and spread in bottom of dish. Top with chopped veggies, olives then add Mexican cheese to the top.  Open a big bag of corn chips, Doritos etc and dig in!!!!

Again so many thanks, Linda! These are wonderful.

So now we have the beginning and the end but we need something in the middle for a main dish!


                        ONE DISH CHICKEN, GREEN BEANS AND POTATOES



 

Nothing is easier then this....a whole meal minus a salad in one dish.

Boneless, skinnless chicken breasts (however many you need for those dining)
1 lg bag frozen green beans
Small red potatoes (white potatoes will work, too) cut into quarters (more pieces if usng Idaho)
1 envelope dry Italian salad dressing
1 stick Butter

In a 9 x 12 baking dish place chicken down the center of the dish. Place frozen green beans on one side of the chicken and potatoes on the other. Place pieces of butter over the top of the chicken, beans and potatoes then sprinkle about half the envelope of dry Italian dressing mix over the top. Bake at 350 for 45 minutes to an hour. I checked at 45 minutes and all were cooked.

Throw in a green salad or a fruit salad and...............................

                                    THAT'S WHAT'S FOR DINNER!!!!!!

It was a dark and gloomy night.......

.....so begins a lot of stories designed to "scare" you. But there are so many other books out there besides those written to scare the pants off you!!!!  I am afraid I am biased toward the mystery/thriller and legal thrillers but I do read a good romance and historical tombs.  If pressed to choose a favorite author I'd be hard put to choose just one., I LOVE James Patterson....especially his Alex Cross and Women's Mystery Club series but recently read a few stand-along novels and have begun his Michael Bennett series. Love Michael Bennett....I mean, here's a NY detective who works full time and manages to raise 10 adopted children after his wife dies of cancer....of course with the help of a nanny and his grandfather who became a priest after grandmother passed away. Start with STEP ON A CRACK and move forward from there with RUN FOR YOUR LIFE, WORST CASE, TICK TOCK and the latest I, MICHAEL BENNETT.  Very good reads and even gives Alex Cross (same author) a run for his money.

And now to move away from the mysteries and suspense genres.... I recently read a marvelous book recommended to me by my long time friend, Linda Percy called "To Heaven and Back" by Dr. Mary C. Neal. Dr. Neal, while on a kayaking trip in Chili, capsized going down a waterfall and was drowned. She was trapped underwater, tied into her kayak,  and despite everything being done by all those there her rescue became impossible. Finally after she had been under the water long enough to be determined to be dead something happened to dislodge the kayak allowing rescuers to reach her. Numerous tries to resuscitate seemed useless until finally she began breathing again...tho not very well.  Dr. Neal had been raised in a church environment but was never overly concerned about God and his miracles. This incident restored her complete faith that there ARE angels at work in all of our lives. She describes what she saw as she entered heaven. This is a must read book.....tho I have always believed in the existence of angels it wasn't till I read this book (totally unlike the style of books I normally read) did I know fully in my heart that each and everyone of us has an angel....perhaps more then one....watching over us. This is a quick read but one I highly recommend.




Let's don't forget the little folk who are avid readers like my Little Man....Gabriel loves books and is an excellent reader. Last fall we went thru the Mercy Watson series written by Newbery Award Winner Kate  diCamillo and illustrated by Chris Van Dusen. Mercy is a pig....but the Watsons think of her as their daughter!!!!!! Rach book in this series can be completed in 2 readings and Gabriel, who was in first grade at that time, had no problems reading them. It was nice, after 40 years of planning story programs and reading to thousands of children, to be read to!!!!! I might add that Mercy LOVES toast so make a few slices for your young reader and let them dig into the Mercy Watson series!!!!!

Hopefully Gabriel and I will tackle another series of Choose Your Own Adventures, Goosebumps series and the Magic Tree House series. But in the meantime I am going to close down this blog for today and go finish my latest mystery by Lisa Scottoline:

Everyone needs a new idea occassionally!!!!

A few years ago I learned a few cost saving tricks to household items that, retail, costs a small fortune,. Now, I don't know about the rest of you but I don't have a fat bank account so I tried a few and some of them I actually liked and still use today.  Now, I am a huge fan of Dollar Tree and get a great many of my cleaning products there among many other things.  I tried the "recipe" for Febreze and I LOVE it and I can make a whole lot of spray bottles using one bottle of softner.  I used an old Febreze spray bottle....Febreze that I paid over $5 for and when it ran out...oops...no more Febreze.

1/8 C fabric softner
2 T baking soda
Hot water....to fill spray bottle

Combine all ingredients and shake well and spray away.  The baking powder helps neutralize odors!!
Now....I triple the ingredients so the bottle lasts a bit longer. When it runs out then I just make up another bottle! So simple and Dollar Tree has several softner scents to choose from.


I don't know many who like standing up at an ironing board and I am one of those.  So I made a homemade version of "Wrinkle Free".  So easy and I've used this on all things needing ironing including my grandson's jeans.

1 T fabric softner (I use the same softner I used for my Febreze)
1 C water

Mix well and put in spray bottle.  Shake bottle well then spray garment, smooth out wrinkles and hang to dry. Drying won't take long unless you saturate the clothing. Again...I triple and sometimes even quadruple this and make a big plastic bottle full.


When my dryer died on me I found myself using the laundromat across the street to dry my clothes...especially in foul weather so I made my own dryer sheets......

I took an old ragged towel and cut it into about 4 X 4 pieces. In a large margarine tub I put about a cup of fabric softner (from the same bottle of softner I used for the Febreze and Wrinkle Free) and several of the pieces of cloth. When ready to dry clothes, squeeze rags out and place in dryer with clothes and dry away! When drying is done return rags to container for next time.

Yesterday I received an email giving me a ton of uses for WD-40.....thanks Linda Percy for this heads up. Will be out later getting me a couple cans of this stuff. Wonderful uses. Some of these I already knew but there are a LOT I will be trying!!! And now I am sharing with you all.





                             What is the main ingredient of WD40?



Before you read to the end, does anybody know the main ingredient of WD-40?  Don't lie and don't cheat.  WD-40.   Who knew; I had a neighbor who bought a new pickup.  I got up very early one Sunday morning and saw that someone had spray painted red all around the  sides of this beige truck (for some unknown reason) I went over, woke him up, and told him the bad news. He was very upset and was trying to figure out what to do....probably nothing until Monday morning,  since nothing was open.  Another neighbor  came out and told him to get his WD-40 and clean it off.   It removed the unwanted paint beautifully and did not harm his paint job that was on the truck.  I'm impressed! WD-40 who knew?  'Water Displacement #40'.  The product began from a search  for a rust preventative solvent and  degreaser to protect missile parts.  WD-40 was created in 1953 by three technicians at the San Diego Rocket Chemical Company.  Its name comes from the project that was to find a 'water displacement' compound.  They were successful with the fortieth formulation, thus WD-40.  The Convair Company bought it in bulk to protect their atlas missile parts.  Ken East (one of the original founders) says there is nothing in WD-40 that would hurt you.  When you read the 'shower door' part, try it.  It's the first thing that has ever cleaned that spotty shower  door.  If yours is plastic, it works just as well as glass.  It's a miracle!  Then try it on your stove top.  It's now shinier than it's ever been.  You'll be amazed.    

                       Some WD-40 Uses:

  1.  Protects silver from tarnishing.
  2.  Removes road tar and grime from cars.
  3.  Cleans and lubricates guitar strings.
  4.  Gives floors that 'just-waxed' sheen without making them slippery.
  5.  Keeps flies off cows.  
(I love this one!)
  6.  Restores and cleans chalkboards.
  7.  Removes lipstick stains.
  8.  Loosens stubborn zippers.
  9.  Untangles jewelry chains. 

10.  Removes stains from stainless steel sinks.
11.  Removes dirt and grime from the barbecue grill.
12.  Keeps ceramic/terra cotta garden pots from oxidizing.
13.  Removes tomato stains from clothing.
14.  Keeps glass shower doors free of water spots.
15.  Camouflages scratches in ceramic and marble floors.
16.  Keeps scissors working smoothly.
17.  Lubricates noisy door hinges on vehicles and doors in homes.
18.  It removes black scuff marks from the kitchen floor!  Use WD-40 for those  nasty tar and scuff marks on flooring.  It doesn't seem to harm the finish and you won't have to scrub nearly as hard to get them off.   Just remember to open some windows if you have a lot of marks.
19.  Bug guts will eat away the finish on your car if not removed quickly!  Use  WD-40!
20.  Gives a children's playground gym slide a shine for a super fast slide.
21.  Lubricates gear shift and mower deck lever for ease of handling on riding mowers...
22.  Rids kids rocking chairs and swings of squeaky noises.
23.   Lubricates tracks in sticking home windows and makes them easier to open.
24.  Spraying an umbrella stem makes it easier to open and close.
25.  Restores and cleans padded leather dashboards in vehicles, as well as vinyl bumpers.
26.  Restores and cleans roof racks on vehicles.
27.  Lubricates and stops squeaks in electric fans.
28.  Lubricates wheel sprockets on tricycles, wagons, and bicycles for easy handling.
29.  Lubricates fan belts on washers and dryers and keeps them running  smoothly.
30.  Keeps rust from forming on saws and saw blades, and other tools.
31.  Removes splattered grease on stove.
32.  Keeps bathroom mirror from  fogging.
33.  Lubricates  prosthetic limbs.
34.  Keeps pigeons off the balcony (they hate the smell).
35.  Removes all traces of duct tape.
36.  Folks even spray it on their arms, hands, and knees to relieve arthritis pain.
37.   Florida 's favorite use is:
 'cleans and removes love bugs from grills and bumpers.'
38.  The favorite use in the state of New York, WD-40 protects the Statue of Liberty from the elements.
39.  WD-40 attracts fish.  Spray a little on live bait or lures and 
you will be  catching the big one in no time.  Also, it's a lot cheaper than the chemical attractants that are made for just that purpose.  Keep in mind though, using some chemical laced baits or lures for fishing are not allowed in some states.
40.  Use it for fire ant bites.  It takes the sting away immediately and stops the itch.
41.  WD-40 is great for removing crayon from walls.  Spray on the mark and wipe with a clean rag.
42.  Also, if you've discovered that your teenage daughter has washed and dried a tube of lipstick with a load of laundry, saturate the lipstick spots with WD-40 and rewash.  Presto!  The lipstick is gone!
43.  If you sprayed WD-40 on a distributor cap, it would displace the  moisture and allow the car to start.

P.S.  The basic ingredient is FISH OIL.

Mom, I'm bored!!! What can I do?

......or in my case it's "Grandma, there's nothing to do."  However, my 7 year old grandson is usually pretty good about entertaining himself in one fashion or another but he DOES have his moments of sheer boredom. Last fall I started him an activity notebook that had puzzles, coloring pages, math work sheets, word searches etc. I observed the fall and winter holidays then came Valentines, St. Patty's Day and Easter. Now I'm in the process of printing the contents to cover summer stuff.  In this notebook I put a zippered pencil holder and in that put crayons, colored pencils and even a pair of safety scissors for anything in the notebook that needed cutting,  The notebook, pencil holder, crayons, colored pencils and scissors were bought at Dollar Tree. Dollar Tree is my home away from home!!!!! Originally I put this together for him to use during road trips....long, short or around town.Of course, the notebook I made was for a 7 year old but there is a ton of stuff that can be printed out for younger children and preschoolers.

But an activity book will entertain them for just so long so with Gabriel I try to take him to a nearby park a couple days a week but with our weather so miserable hot it's likely that if we go right now the play equipment will be way too hot for him to play on. So in order for him to get enough exercise to get tired enough for bed at bedtime we go to our local mall where they have several play areas and on Tuesdays "Family Night" rides on the big carousel are free. So check with your malls to see what may be offered for children....and the cheaper the better!!!!!

As a retired Children's Librarian my first avenue to fun is a good book....any time of the year. My little man is a reader so we are using a suggested summer reading list to help fill up the hot hours. Check with your local libraries.....when I was the Children's Librarian at our local library I had story programs for just about every age from birth thru the teen years. In our county the libraries are a part of a county wide system so the children are not limited to programs in our town's library....so branch out and take it all in.

Earlier today a friend and I were discussing the problem of bored kids and she had told her grandchildren she would take them to museums, feed ducks in a nearly park, go bowling, GO TO THE LIBRARY..etc. All are such wonderful ways to while away long hot summer days. One of our local movie theaters has, in the past, offered free movies for children on Tuesdays and Wednesdays, however I learned today that they are now charging a small entry fee. So....another idea is to check out local theaters.

If you are on a limited budget there is always game playing....Snakes & Ladders, Uno, Monopoly, Go fish...just a ton of games to be played. I bought several games for Gabriel at....yep, you guessed it...Dollar Tree! We play Hide & Seek....yes, inside and when the temp drops a bit we go outside and we do such mundane games as I Spy and Count the Cars. Anything that makes your young one have fun and pass the hours without whining. We live on the water so trips to the beach happen once in a while but I have never felt good about taking someone else's child to the beach without a parent there. But someti8mes we DO go and build sand castles.

I don't know about your young'uns but my grandson seems to have a hollow leg and is always asking for something to eat.  We don't keep a bunch of "treats" but I do make cookies, popsicles and I keep popcorn on hand along with diet soft drinks, lemonade and Koolaid. Here are a couple recipes that I use all the time.

                                 Peanut butter cookies



   
1 c. peanut butter
1 c. sugar
1 egg and tsp vanilla.

Mix all together well and form into small round ball and place on un-greased baking sheet and flatten by making a criss-cross with a fork dipped in sugar. (I sprinkle sugar on top of cookies before baking) Bake at 350 for about 10-12 min. Before they cool you can add a Hershey kiss to the top of each cookie!

Wish I could take credit for this so simple cookie recipe but alas....the award goes to Paula Deen!!!!


Now I am NOT a fan of Nutella but I must admit that fudgesicles made with Nutella are superb!!!! Make this easy delight and pout into popsicle holders....yes, you can get a set of 6 at the epitome of fine shopping Dollar Tree!

                                 Nutella Fudgesicles





1 1/2 c. milk
1/2 c Nutella

Whisk the two ingredients together until well blended and smooth then pour into popsicle molds and put in freezer. I take them out of the molds when they are frozen and store in ziplock in freezer.

Now is there anything easier then this????? And I even liked them!!!!! And Little Man loved them!



Ok.......hope some of this will help with those mournful words "I'm bored" or "I'm hungry!"

Summertime and the living is easy......

.........so went an old song sung many years ago by the incomparable Lena Horne. You young ones won't remember her...I barely do!!! But it's that time of year when it's hot and no one wants to stand over a hot stove half the day to churn out a decent meal.  So I am going to give you a few ideas for good meals...done mostly in a crockpot....that will leave you full and happy!

First let me share with you a recipe by that beautiful Southern cook, Paula Deen.


 Broccoli Cole Slaw





2 pkg broccoli slaw mix (found where other slaw mixes are)
2 pkg. Oriental Raman Noodles
1/4 c. slivered almonds (I always use more!)
1/4 c sunflower seeds (I always use more!)
3/4 c butter

Slaw dressing:

3/4 c canola oil
1/4 c brown sugar
1/4 c apple cider vinegar

Melt butter in skillet. Place the Ramen noodles in a bag and break into small pieces. Add noodles and almonds to the butter and saute till light brown. In a bowl combine dressing ingredients adding the Raman Noodle seasoning packet. Whisk well. When noodles are a light brown add to broccoli mix in a large bowl. Pour dressing over slaw mix and add the sunflower seeds and toss well. Cover and refrigerate.

Note:  I usually made a double recipe of the dressing. Slaw will last about a week in the refrigerator.


Now....just yesterday I added homemade Sloppy Joes to our dinner along  with baked beans and Oreo
 Pudding Poke Cake!

                 Sloppy Joes - Crockpot Style
         



2 lbs. ground beef                                                                        
2 T chili powder
6 T brown sugar
1 lg onion chopped
1 very large green pepper chopped       
6 T brown sugar  
4 stalks celery, chopped
6 T prepared mustard
6 cloves garlic, chopped (I sometimes use garlic powder or minced garlic from a jar)
6 T Worcestershire Sauce
2 1/2 c ketchup
2/3 c water

Chop onion and peppers. Crumble up ground beef in large skillet and add the chopped veggies along with the garlic. While that is cooking place all the rest of the ingredients into a crockpot (a large one) and mix well. When meat mixtures is done drain off fat and add to crockpot. Cook on low all day.

Note: This recipe has been doubled....half it if you want to make less. I do a double batch and hope I have enough left to freeze for later!!!! And get this on to cook early in the morning so it's ready to eat when you are ready!


And now to dessert.....

Oreo Pudding Poke Cake









1 chocolate cake mix
2 (4 oz) boxes Oreo instant pudding mix
4 cups milk
Oreo cookies, crushed

Prepare cake according to directions on box and bake in a 9 x 13 pan.  When cake is slightly cooled use a round handle of a wooden spoon to poke rows of holes in the cake about a half inch apart. Mix pudding with the 4 c milk and stir until slightly thickened and pour over cake. Use a spatula to spread pudding and be sure it gets down in those poked holes! Refrigerate for about 2 -3 hours then sprinkle with crushed Oreo cookies. YUM!!!!

Note: you can also add Cool Whip to the top of the pudding then add crushed cookies!!!! 

Open a couple cans of bake beans, doctor them to your liking and there you have it.....
