It's a new year and with God's help it will be a GREAT one! Today is a dull and rainy day but promises to be cooler tomorrow and hopefully a sunny one. I don't make new year resolutions but found a short while ago that I had mentally made a list of things I wanted to accomplish in the coming months. So...I have already begun by doing a little early spring cleaning. And from this I will proceed outdoors and conquer the yard then paint the house. It's going to be a VERY long and busy but hopefully productive year.
In between all the things I have to do here I will still be going to my Gabe's school and taking him and his classmates to their school library. I so enjoy doing that....it adds so much to my week! I'm also trying to get back into my crafts. I made (knitted) a scarf for Steve for Christmas and pray daily that it holds up. I taught myself to knit which explains why I worry about the scarf surviving much use. LOL!
It's a Tuesday so that means Steve will go straight from school to Destin for his church choir rehearsal. That gives me time to dream up something to feed him when he gets home! I am going to do something with chicken and throw in a little rice and a veggie but I have a new recipe for a dessert that I'm trying for the first time today. It;s an apple-cranberry dish.,....
Apple Cranberry Casserole
13 X 9 inch casserole dish
5 cups of Granny Smith apple slices (or use the equal amount with prepared pie apples) of course fresh are better.
1 Can of whole cranberry sauce
Sprinkle about 1/3 cup of brown sugar over the apples and cranberries in the casserole dish. Stir in slightly.
Topping
½ stick of margarine or butter, melted
½ cup brown sugar
1 cup of oatmeal
1/3 cup flour
½ cup chopped nuts
Mix together thoroughly and spread over apples and cranberries.
Bake uncovered 45 minutes – in 350-degree oven (Maybe 55 minutes if you would like more brown – ovens vary)
I rarely share recipes that I haven't tried but thought this time I would since it's so simple and sounds so good!!!! I will be sharing more recipes, craft ideas and of course, as retired Children's Librarian, books that appeal to me!
